HOW TO MAKE THE BEST GUILT FREE BROWNIES

These ketogenic diet brownies take just a couple minutes of prep time and the rest is baking. So easy! Start by lining a baking dish and preheating the oven.

Mix together the coconut oil and chocolate and melt in the microwave. After it cools for a couple of minutes add in the eggs, sweetener, and vanilla.

Add in the almond flour, cocoa powder, and salt. Then toss in the dark chocolate chunks and your favorite add-ins and bake until the center is done.

Keto Angel Food Cake

After much experimenting, I have finally perfected Keto Angel Food Cake! It’s light and airy, with the perfect angel food texture. It’s completely grain-free and dairy-free.

This keto angel food cake represents an absolute triumph for keto baking. Perfectly light and airy, sweet, and delicious, just as real angel food cake should be.

I have to be very honest and say I was on the fence about publishing this recipe right now, given the current state of the world.

But so many of you have written, asking me to keep doing what I do best, baking and sharing recipes. We need these little bright spots, perhaps now more than ever.

HOW TO MAKE KETO ANGEL FOOD CAKE

Even conventional angel food cake takes some effort to make properly. This is a good baking project when you have some time on your hands and are up for a challenge!

A few important do’s and dont’s:

Don’t grease the pan

Angel food cake needs to “climb” the sides of the pan and greasing the sides interferes with this.

Do line the bottom with parchment

This is critical for the easy release of the cake once it has cooled. I have clear instructions about how to line a tube pan with parchment in the recipe notes.

Do consider weighing your dry ingredients

Accuracy is crucial for angel food cake recipes, which is why I provided the exact weights for my almond flour and protein powder.

Do use protein powder

Protein powder is part of what allows keto angel food cake to rise and have the proper structure. You will need it for this recipe and I recommend egg white protein. Whey protein should also work but I haven’t tested that out properly.

Do sift your flour mixture properly

Sifting the flour thoroughly helps the cake be lighter and fluffier. If you don’t have a good sieve for sifting, then spend some time fluffing up the flour mixture with a fork.

Don’t invert the cake pan right away

Traditional angel food cake has you inverting the pan the minute it comes out of the oven, to avoid heaviness at the bottom of the cake. But I found it was important to let the cake cool for 20 minutes before inverting it.

The best low-carb and keto chaffle recipes

Chaffles have taken the low-carb world by storm and no wonder: they’re awesome! Using a very simple base of just cheese and eggs, you can add and adjust for endless flavour combinations, sweet or savoury. Use them on their own or as the vehicle for fillings and toppings. On this page you’ll find everything you need to cook the perfect chaffles.

We have our Basic Chaffle recipe which has almond flour added to provide a bit of additional structure, but you can use just eggs and cheese, such as in our Keto Pizza Chaffles where we used a combination of cheddar and parmesan cheeses.

If you are craving a sweet chaffle, we recommend using neutral tasting mozzarella cheese, but note that because it melts a lot more, you should add a tablespoon of coconut flour to your batter. This helps keep it structured and also adds a natural sweetness.

A simple chaffle calculation is ½ cup of cheese per egg, per chaffle.

Try adding almond flour or coconut flour. Play around with your cheeses. Add fruits, spices, herbs or nuts and let your imagination run wild.

Chaffles can be frozen and re-heated so make a big batch and save for super quick and easy meals.

 

How to make chaffles without a waffle maker

If you don’t own a waffle maker you actually can fry the batter like a pancake in a frying pan or even better, in a grill pan. They will not get all the crispy edges as you will get by using a waffle maker, but they will still taste great.

Heat up a frying pan with butter. Cook for 3-4 minutes until the chaffles feel crispy. Gently flip the waffles to the other side with a spatula. Cook for an additional 3-4 minutes until done.
